Saurabh was chosen to represent India in the 2019 ACC Emerging Teams Asia Cup in Bangladesh in November. On November 14 2019 during the Emerging Teams Cup he made his List A debut for India against Nepal. He was purchased by Sunrisers Hyderabad in the auction for the 2022 Indian Premier League competition in February 2022.

Early on Saurabh Dubey used a tennis ball to play cricket. He used to compete in tennis ball events held at night. Although his parents preferred that he become an engineer he had a liking for fast bowling. But Saurabh decided to follow his ambition and joined Purshottam Joshi's Wardha's Brotherhood Cricket Association in 2016.

At Joshi's suggestion the bowling coach for Vidarbha Subroto Bannerjee put Saurabh through a test after he participated in various competitions for the Brotherhood. He received instruction from Bannerjee at the VCA (Vidarbha Cricket Association). He competed in the Col. CK Nayudu Trophy shortly after being chosen for the Vidarbha Under-23 team.

CK Nayudu Under-23 Trophy in 2018–19 when he amassed 25 kills for the Vidarbha U–23 squads over nine matches at a mind-blowing average of 18.02 including a 4-for and two 5-fors. He was the first Vidarbha player to be selected for the bilateral series between Bangladesh and India's U-23 team. In the 2020–21 Vijay Hazare Trophy he faced Andhra and made his List A debut. He also participated in the IPL 2020 which was played in the United Arab Emirates as a net bowler for the Mumbai Indians.

In the Vijay Hazare Trophy 2020–21 Saurabh had a brilliant run finishing the competition as Vidarbha's top wicket-taker with 9 victims in 5 matches at an average of 27.00 and an economy rate of 5.87. His performance against Jharkhand where he picked up statistics of 3/59 and took the wickets of Utkarsh Singh Virat Singh and Vikash Singh was his finest. 

In the IPL 2022 auction his ability to bowl yorkers and swing and seam the ball at a high speed won him a contract.
